Lately I have needed recipes that I have spread out in random books and have had that panicked feeling that “it is lost forever” before running across the temporarily misplaced source. I decided to start making up recipe cards, novel I know, with these recipes that I really would miss if I could not find. I will try to blog the recipes as I use and record them.
Today’s recipe is a simple pancake syrup recipe that I use all the time. I found this years ago in a great cookbook called More-with-Less Cookbook by Doris Janzen Longacre.
Maple Syrup
Combine in saucepan:
1 3/4 c. white sugar
1/4 c. brown sugar
1 c. water
Bring to boil, cover, and cook 1 minute. Cool slightly.
Add:
1/2 tsp vanilla
1/2 tsp maple flavoring
Cover saucepan for a few minutes as syrup cooks to melt down crystals; helps prevent syrup from crystallizing later in storage.
